Lunch this week

I have leftovers from last week in the freezer so this week, I just made this one pot of Barley Pumpkin Stew.

It’s the usual suspects from the remainder of last week’s ingredients still in the fridge. Celery, carrots, garlic, onions, chard, barley and a Kabocha squash. I seasoned with salt, pepper, Italian herbs, and finished with lemon juice and olive oil added at the end.
