I tried my first bottle of home-brewed kombucha yesterday. It was 3 days into the second fermentation. When I opened it, it didn’t pop. It tasted fine though. I used a cranberry pomegranate juice for the second ferment. It was barely fizzy. I think in comparison to the one my coworker brought me, mine wasn’t nearly as good.
She told me with juices, she’s had the best luck with orange juice, so next time I might try that. Also, I would do a full week for the second ferment to get more fizz in it.
I’ve since expanded my kombucha production to 3 jars.
